Japan Castles and Cuisine

Between 1596 and 1615, almost 100 castles were built all around Japan, spawning surrounding cities and townships, cultures, and rivalries. Despite around 200 castles remaining in the country today, only 12 have tenshu (Japanese-style main keep) that survived the Meiji Restoration of 1868.

The traditional cuisine of Japan (Japanese: washoku) is based on rice with miso soup and other dishes; there is an emphasis on seasonal ingredients. Side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Seafood is common, often grilled, but also served raw as sashimi or in sushi.
